We hope that NOTCH brewery will provide customers a way to see the unique brewing processes and equipment we use - a traditional decoction brew-house, open and closed fermentation, horizontal lagering tanks, German gravity cask dispensing, and a draft system imported from the Czech Republic – tools, process and equipment that will allow a wide variety of session beer (and occasionally non-session beer) to be produced.

CZECH PIVO

Taste: Lemon, Malty Sweetness, Bread

Notes: Classic Czech pale lager, brewed with floor-malted Pils malt and Sterling hops. Double decoction, open fermentation, and extended lagering time bring a bit of Plzen to Brighton and Salem.

Taste: Lemon, Crispy, Black Pepper​

Notes: The most widely consumed beer style in the country that consumes the most beer in the world. Brewed with floor-malted Czech barley and Saaz hops. Triple decocted, open fermented, naturally carbonated, lagered forever.

GERMAN & AUSTRIAN BIER

SALEM LAGER
Bavarian Helles || 4.5% || 16.9 oz. 

 

Taste: Bright, Clean, Subtle Sweetness
Notes: A classic style from Munich, and what the Bavarians created after the Czech’s discovered Pilsner. Less hoppy than the Pilsner, Helles is malt driven and the flavor is clean and bright.

​HEFE WEISSE
Bavarian Wheat Bier || 5.2% || Weisse Glass

 

Taste: Clove, Banana, Full-bodied
Notes: Classic Bavarian wheat beer and one of the most technically challenging beers we make. Open fermented for maximum aroma and flavor, with clove and banana aromas formed from the unique Bavarian yeast.

French Biere

FRENCH DISKO
French Pils || 4.5% || 16.9 oz. 

Taste: Spicy hop, fruity malt, clean dry finish
Notes: Inspired by French Pils from the Alsace region of France. French pils malt and corn, single decoction, hopped with French Strisselspalt, lagered forever. Fun fact: 60% of beer consumed in France is brewed in Alsace.​
